Cream Cheese Frosting
1 package (8 ounces) cream cheese, softened
1/2 cup butter, softened
2 1/2 to 3 cups confectioners' sugar, sifted
1 teaspoon vanilla extract
In a medium bowl, with a mixer in medium speed, blend together the cream cheese and butter. Gradually beat in sifted confectioners' sugar. Increase the speed to medium-high; beat until frosting is light and fluffy. Then beat in vanilla extract.
Yield: About 2 to 3 cups
